Whip up gluten-free banana muffins for a delicious and celiac-friendly treat using ripe bananas.
Ingredients:
  • 270g (1 3/4 cups) gluten-free self-raising flour
  • 90g (1/2 cup) rice flour (see note)
  • 85g (1/2 cup) coconut sugar
  • 310ml (1 1/4 cups) milk
  • 60ml (1/4 cup) vegetable oil
  • 1 egg
  • 8.80 gm vanilla extract
  • 171.60 gm mashed banana (see note)
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line twelve 80ml (1/3 cup) muffin pans with paper cases.
  • Whisk the flours and sugar together using a balloon whisk in a large bowl, then create a well in the center.
  • In a medium jug, combine milk, oil, egg, and extract and whisk together. Pour the mixture into the well and stir until almost mixed. Gently fold in the banana until just combined.
  • Divide the mixture evenly into the paper cases. Bake for 20-25 minutes or until a clean skewer inserted into a muffin. Serve while warm.
