Gluten-free banana oatmeal muffins made with oats, applesauce, and a special flour blend. Enjoy fresh or frozen!
Ingredients:
  • 1.5 cups gluten-free flour blend (such as Namaste®)
  • 1 cup gluten-free quick-cooking oats
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.33333334326744 cup applesauce
  • 0.5 teaspoon vanilla extract
  • 1 cup mashed banana
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), and dress up a 12-cup muffin tin with parchment baking cups.
  • In a bowl, mix together flour, oats, sugar, baking powder, baking soda, and salt.
  • In a large bowl, gently whisk the egg. Mix in milk, applesauce, and vanilla extract. Incorporate mashed banana and blend well. Gently fold in the flour mixture until just combined. Distribute batter evenly among the muffin cups.
  • Bake in the preheated oven for 18 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
