Get kids involved in making a healthy and satisfying breakfast to kick off the day!
Ingredients:
  • 125g Nuttelex spread
  • 161.25 gm caster sugar
  • 2 eggs, lightly beaten
  • 260.00 gm mashed ripe banana
  • 125.00 ml raisins, chopped
  • 112.50 gm gluten-free self-raising flour
  • 62.50 ml gluten-free plain flour
  • 32.50 gm rice flour
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced). Lightly grease a 6cm-deep, 9cm x 19cm loaf pan, then line it with baking paper, making sure to leave a 2cm overhang on the long sides.
  • In an electric mixer, blend spread and sugar until pale and creamy (about 1 minute). Gradually add one egg at a time, beating well until just combined.
  • Combine the banana and raisins, then sift the flours and bicarbonate of soda over the mixture. Stir until just combined and spread into the prepared pan. Bake for 1 hour or until a skewer inserted in the center comes out clean. Allow it to cool in the pan for 5 minutes before turning out onto a wire rack to cool. Serve and enjoy!
