Crispy gluten-free fried chicken made with gluten-free flour and beer for a delicious, golden dinner enjoyed by all!
Ingredients:
  • 1.5 cups vegetable oil for frying
  • 1 red bell pepper
  • 1 onion, cut into 1/4-inch slices
  • 1 zucchini, cut into 1/4-inch slices
  • 2.75 cups gluten-free all purpose baking flour
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 1 cup gluten-free beer
  • 0.5 cup sparkling water
  • 4 skinless, boneless chicken breast halves
Instructions:
  • Heat up vegetable oil in a deep-fryer or large saucepan until it reaches 350 degrees F (175 degrees C). Pat dry sliced bell pepper, onion, and zucchini on a paper towel.
  • Combine flour, baking powder, and salt in a large bowl. Pour in beer and sparkling water, then mix until batter is just combined.
  • In batches, coat bell pepper, onion, and zucchini slices in the batter, allowing excess to drip off. Fry in hot oil until golden brown on each side, for about 2 to 4 minutes. Place the fried vegetables on a paper towel-lined plate.
  • Coat chicken breasts in the leftover batter and fry in hot oil until beautifully golden, approximately 6 to 8 minutes on each side. Ensure chicken reaches an internal temperature of at least 165°F (74°C) when checked with an instant-read thermometer. Drain on paper towels to remove any excess oil.
