Quick and easy homemade ginger beer with a refreshing summery twist.
Ingredients:
  • 140 g fresh ginger
  • 4 tablespoons muscovado sugar
  • 2-3 lemons
  • 1 litre soda water or sparkling mineral water
  • a few sprigs of fresh mint
Instructions:
  • Grate the ginger on a coarse cheese grater, leaving the skin on if desired. Place the grated ginger with its juice in a bowl and sprinkle in the muscovado sugar. Add lemon peel from 2 lemons to the bowl and lightly crush with a pestle or rolling pin for 10 seconds. Squeeze the juice from all 3 lemons and pour most of it into the bowl along with fizzy water. Allow to sit for 10 minutes, then adjust sweetness with sugar or tartness with lemon juice to taste. Strain the ginger beer into a large jug, add plenty of ice and sprigs of mint before serving.
