Quick and easy gluten-free almond biscotti made with gluten-free flour and xanthan gum.
Ingredients:
  • 3 eggs
  • 1 cup white sugar
  • 0.75 cup vegetable oil
  • 2 teaspoons anise seed
  • 1.5 cups gluten-free all-purpose flour mix (such as Bob's Red Mill®)
  • 1.5 cups rice-based flour mix with xanthan gum
  • 1 teaspoon xanthan gum
  • 1 cup chopped almonds
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet with parchment paper or a light greasing.
  • In a bowl, beat eggs until thick and lemon-colored. Gradually add sugar while beating. Pour in oil and beat until smooth. In a separate bowl, combine gluten-free all-purpose flour mix, rice-based flour mix, baking soda, and xanthan gum. Gradually stir into the egg-sugar mixture until well-mixed and sticky. Fold in almonds.
  • Transfer the dough onto the baking sheet and shape it into two loaves, each 1/2-inch thick and 2 1/2 inches wide.
  • Preheat the oven and bake for 20 minutes. Then, let the loaves cool on the baking sheet for 2 minutes before slicing them into 1/2-inch slices and placing them cut side down on the baking sheet.
  • Bake until biscotti are golden brown, around 10-15 minutes. Then, cool completely on a wire rack.
