Ingredients:
  • 325 ml semi-skimmed milk
  • 2 large free-range eggs
  • 1 teaspoon white wine vinegar
  • 450 g gluten-free brown bread flour plus extra for dusting
  • ½ teaspoon sea salt
  • 2 tablespoons golden caster sugar
  • 1½ x 7g sachet dried yeast
  • 3 tablespoons olive oil
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. Gently heat the milk in a pan over low heat. Set aside to cool slightly. In a large bowl, combine eggs with vinegar, then gradually mix in the warm milk. In another bowl, mix flour, salt, sugar, and yeast. Using a wooden spoon, combine dry ingredients with the wet mixture until a sticky dough forms. Add olive oil and knead into a ball, adding flour as needed. Place the dough on an oiled baking tray, cover with a damp towel, and let it rise in a warm place for about 1 hour until doubled in size. Bake in the preheated oven for 35 minutes or until golden brown and cooked through. Cool on a wire rack, then slice and enjoy. Perfect with stews and soups or toasted with butter and jam.
