Gluten-free breaded baked pork tenderloin: a simple and tasty weeknight dinner.
Ingredients:
  • 2 cups rice-bread crumbs (such as PaneRiso™)
  • 0.5 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 2 pork tenderloins
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and prepare a baking sheet by lining it with aluminum foil.
  • Combine bread crumbs, olive oil, oregano, basil, rosemary, and garlic powder in a resealable plastic bag. Add pork tenderloin, seal the bag, and shake well to coat the pork. Transfer the coated pork to the baking sheet.
  • Roast in the oven until pork is fully cooked, approximately 35 minutes. Use an instant-read thermometer to ensure the temperature at the center is 145°F (63°C). Rest the pork for 10 minutes before slicing into 1/2-inch pieces.
