Gluten-Free Caramelicious Peanut Butter Bars

Gluten-free indulgence with peanut butter cookies, caramel, peanuts, and chocolate layers.
Ingredients:
  • 1 package Immaculate Baking Co.™ gluten free peanut butter cookie dough
  • 1 bag (11 oz) caramels, unwrapped
  • 2 tablespoons water
  • 3/4 cup peanuts or cashews, coarsely chopped
  • 1 1/2 cups semisweet chocolate chips
  • Coarse sea salt, if desired
Instructions:
  • Preheat the oven to 350°F. Grease a 9-inch square pan with cooking spray and press the cookie dough into the bottom of the pan.
  • Bake until beautifully golden brown, about 15 to 17 minutes.
  • In a small saucepan, gently melt caramels with water over low heat while stirring until smooth. Set aside 1/4 cup for drizzling. Add peanuts to the rest of the caramel and spread over the crust evenly.
  • In a small microwave-safe bowl, heat chocolate chips in the microwave on High for about 2 minutes, stirring until smooth. Spread over the cooled caramel layer. Microwave the remaining caramel on Medium (50%) for 10 seconds until easy to drizzle. Drizzle over the chocolate layer, sprinkle with sea salt, and cut into 4 by 4 pieces.
