Create a flavorful party mix with Parmesan, peanuts, and popcorn.
Ingredients:
  • 8 cups Rice Chex™ cereal (gluten free)
  • 1 bag (3 oz) fat-free butter-flavor microwave popcorn, popped
  • 1/4 cup dry-roasted peanuts
  • 3 tablespoons canola or vegetable oil
  • 1/3 cup grated Parmesan cheese
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
Instructions:
  • Preheat oven to 300°F. Combine cereal, popcorn, and peanuts in a large bowl. Drizzle with oil and toss until everything is evenly coated.
  • Combine the remaining ingredients in a small bowl and sprinkle over the cereal mixture. Toss gently until everything is evenly coated. Spread the coated cereal mixture in a large ungreased roasting pan.
  • Bake uncovered for 15 minutes, stirring halfway through. Transfer to waxed paper to cool for about 10 minutes. Store in an airtight container.
