Gluten-free bars with Rice Chex crust, creamy peanut butter, and chocolate filling - irresistibly crunchy and easy to make.
Ingredients:
  • 1/4 cup butter, melted
  • 2 tablespoons honey
  • 2 1/2 cups Rice Chex™ cereal
  • 1/2 cup salted peanuts
  • 1/4 cup miniature semisweet chocolate chips
  • 1/4 cup peanut butter
  • 6 containers (5.3 oz each) Greek vanilla yogurt
  • 2 tablespoons miniature semisweet chocolate chips
  • 2 tablespoons coarsely chopped salted peanuts
Instructions:
  • Preheat your oven to 350°F and generously spray an 8-inch square pan with cooking spray.
  • Combine melted butter and honey in a bowl and set aside. Coarsely crush cereal. In a medium bowl, mix cereal, 1/2 cup salted peanuts, and 1/4 cup miniature chocolate chips. Add the butter mixture and stir to coat evenly. Press mixture firmly into pan. Bake for 10 minutes, then transfer to a cooling rack for 15 minutes. Chill in the freezer for about 10 minutes before serving.
  • In a small microwavable bowl, combine 1/4 cup peanut butter and 1/4 cup miniature chocolate chips. Microwave on High for 30 to 45 seconds, stopping to stir every 15 seconds, until smooth. Let it cool.
  • Take the crust out of the freezer and spread the yogurt evenly over it. Spoon small dollops of the peanut butter mixture over the yogurt, then use a knife to swirl it in. Finish by sprinkling with your choice of toppings.
  • Allow the dish to freeze solid for approximately 4 hours. Take it out of the freezer 10 minutes before slicing.
