Gluten-Free Chocolate Peanut Butter Layer Bars

Indulge in rich, creamy peanut butter bars with gluten-free chocolate chip cookie mix by Betty Crocker!
Ingredients:
  • 1 box (19 oz) Betty Crocker™ Gluten Free Chocolate Chip Cookie Mix
  • 1/3 cup butter, softened
  • 1/3 cup peanut butter
  • 1 1/4 cups semisweet chocolate chips
  • 1/4 cup butter
  • 1 package (8 oz) cream cheese, softened
  • 2/3 cup peanut butter
  • 3/4 cup powdered sugar
  • 1/2 cup whipping cream
Instructions:
  • Preheat oven to 350°F and lightly spray the bottom of a 13x9-inch pan with cooking spray. In a large bowl, mix the ingredients for the cookie base and topping until a soft dough forms. Drop rounded teaspoonfuls of dough onto an ungreased cookie sheet and gently flatten to make 6 cookies.
  • Press the remaining dough into the pan. Bake the cookies and base for 10 to 12 minutes, or until the edges turn a light golden brown. Allow it to cool for 10 minutes, then set aside the cookies for the topping.
  • In a microwave-safe bowl, heat chocolate chips and 1/4 cup butter on High for 1 to 1.5 minutes, stirring every 30 seconds until smooth. Spread mixture evenly over bars and refrigerate for about 30 minutes until firm.
  • In a medium bowl, combine cream cheese, 2/3 cup peanut butter, powdered sugar, and whipping cream. Use an electric mixer on low speed to blend until smooth. Increase speed to high and beat for about 2 minutes until the mixture is light and fluffy. Spread over the chocolate layer.
  • Crush the remaining cookies and sprinkle them over the cream cheese layer. Gently press them in, then refrigerate until firm, at least for 1 hour. Cut into 8 rows by 4 rows to make bars and store covered in the refrigerator.
