Indulge in delicious gluten-free buttery crumpets.
Ingredients:
  • 375.00 ml gluten-free plain flour
  • 1 tsp dried yeast
  • 5.00 gm caster sugar
  • 257.50 gm milk, warmed
  • 18.40 gm vegetable oil
  • Butter, to serve
  • Gluten-free jam, to serve
Instructions:
  • Combine flour, yeast, sugar, milk, and 3/4 cup warm water in a bowl, whisk until smooth. Cover with plastic wrap and let it rise in a warm spot for 1 hour 30 minutes, or until light and foamy.
  • In a large non-stick frying pan, heat 2 teaspoons oil over medium heat. Brush egg rings with oil and place them in the pan. When hot (refer to Notes), spoon 1/4 cup batter into each ring. Cook until golden brown, approximately 7 minutes.
  • Flip crumpets and gently slide off the rings. Continue cooking for 2 to 3 more minutes until they are golden and fully cooked. Transfer to a plate and cover to keep them warm. Repeat with the rest of the batter, remembering to brush the rings with oil each time.
  • Spread butter and jam on the crumpets before serving.
