Surprisingly moist gluten-free oatmeal cookies.
Ingredients:
  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 0.75 cup white sugar
  • 1 teaspoon gluten-free vanilla extract
  • 0.5 cup cornstarch
  • 0.5 cup sorghum flour
  • 0.5 cup sweet rice flour
  • 0.5 cup brown rice flour
  • 0.5 cup almond meal
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 3 cups rolled oats
Instructions:
  • Preheat the oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  • In a large bowl, use an electric mixer to cream together butter, brown sugar, and white sugar until smooth. Add the eggs one by one, mixing well after each addition, then stir in the vanilla extract.
  • Combine cornstarch, sorghum flour, sweet rice flour, brown rice flour, almond meal, cinnamon, baking soda, and salt in a bowl and whisk. Mix the flour blend into the butter mixture, then add oats and combine to create a soft dough. Shape the dough into walnut-sized balls and arrange them 2 inches apart on a baking sheet.
  • Bake the cookies in the preheated oven until they turn golden and set, approximately 10 minutes. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
