Gluten-Free Denver Omelet

Savory ham, bell pepper, and onion elevate this classic egg dish.
Ingredients:
  • 2 teaspoons butter or margarine
  • 2 tablespoons chopped fully cooked ham
  • 1 tablespoon finely chopped bell pepper
  • 1 tablespoon finely chopped onion
  • 2 eggs, beaten
Instructions:
  • In an 8-inch omelet pan or skillet, melt butter over medium-high heat until it just starts to brown. Tilt the pan to ensure the bottom is coated as the butter melts. Cook the ham, bell pepper, and onion in the butter for 2 minutes, stirring constantly.
  • Pour eggs into pan and slide it back and forth over heat. Stir quickly with a fork to spread eggs continuously over the bottom as they thicken. Allow to lightly brown for a few seconds. Avoid overcooking as the omelet will continue to cook after folding.
  • Tilt the pan and gently slide a fork under the edge of the omelet, then give the pan a quick but firm shake to release the eggs from the bottom. Fold the nearest portion of the omelet towards the center, letting a part of it slide up the side of the pan. Carefully flip the omelet onto a warm plate, allowing the folded portion to roll over the bottom. If needed, neatly tuck the sides of the omelet underneath.
