Gluten-Free Easy Fruit Pizza

Transform a classic favorite into a gluten-free delight with Betty Crocker™ Gluten Free sugar cookie mix.
Ingredients:
  • 1 box (15 oz) Betty Crocker™ Gluten Free Sugar Cookie Mix
  • 1 egg
  • 1/4 cup butter
  • 3 tablespoons canola oil
  • 1 teaspoon gluten-free vanilla
  • 1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
  • 1/3 cup sugar
  • 1/2 teaspoon gluten-free vanilla
  • 2 kiwifruit, peeled, halved lengthwise and sliced
  • 1 cup halved or quartered fresh strawberries
  • 1 cup fresh or frozen blueberries
  • 1/4 cup apple jelly
Instructions:
  • Preheat your oven to 350°F. Prepare a 15x10x1-inch pan by lining it with cooking parchment paper and giving it a light coating of cooking spray. Follow the instructions on the box to prepare the cookie dough using the egg, butter, oil, and 1 teaspoon of vanilla. Break up the cookie dough into the pan and press it evenly to form the crust.
  • Bake for 14 to 16 minutes until edges turn light golden brown and the cookie sets. Allow to cool completely for about 30 minutes.
  • In a small bowl, use an electric mixer to combine cream cheese, sugar, and 1/2 teaspoon vanilla until smooth. Spread this creamy mixture over the cooled crust. Top with fruit. Whisk jelly until smooth and spread over the fruit. Chill in the refrigerator for at least 1 hour. Before serving, run a knife around the edges, then cut into 6x4 rows. Store any leftovers covered in the refrigerator.
