Indulge in decadent gluten-free fudge brownies made with eggs, margarine, cocoa powder, and a gluten-free baking mix.
Ingredients:
  • 0.66666668653488 cup gluten-free baking mix (such as Bob's Red Mill All Purpose GF Baking Flour®)
  • 0.5 cup cornstarch
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 0.75 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 2 eggs, beaten
  • 0.75 cup margarine, melted
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease an 8x8 inch square baking dish.
  • Combine gluten-free baking mix, cornstarch, white sugar, brown sugar, cocoa powder, and baking soda in a bowl. Use a fork to sift and remove lumps. Add eggs and melted margarine. Mix with a large spoon or electric mixer on low for 3 to 5 minutes until a smooth batter forms. Transfer the batter into the prepared baking dish.
  • Line the oven rack with aluminum foil to catch any spills while the brownies bake, rise, and then fall. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
