Chocolate-fudge brownies (wheat and gluten free)

Gluten-free brownies: decadent chocolate bliss.
Ingredients:
  • 65.00 gm rice flour
  • 125.00 ml plain gluten-free flour (we used Orgran brand)
  • 1.00 gm baking powder
  • 42.90 gm cocoa powder
  • 268.75 gm caster sugar
  • 2 eggs, lightly beaten
  • 150g butter, melted
Instructions:
  • Preheat your oven to 180°C. Grease a 4cm-deep, 20cm x 30cm slab pan. Line it with baking paper, leaving a 2cm overhang on both long ends.
  • In a large bowl, sift together flours, baking powder, and cocoa. Add sugar and stir to combine. Create a well in the center and add eggs and melted butter to the flour mixture. Mix with a metal spoon until just smooth.
  • Spread the mixture evenly in the pan and bake for 20-25 minutes, or until a skewer inserted in the center comes out with crumbs sticking to it.
  • Cool the dish in the pan, then lift it out and cut into squares.
