Irresistible pancakes featuring a delectable caramel-banana fusion.
Ingredients:
  • 200g (1 1/2 cups) gluten-free self-raising flour
  • 20.00 gm caster sugar
  • 1 egg, lightly whisked
  • 310ml (1 1/4 cup) buttermilk
  • 40g butter, melted
  • 2 ripe bananas, peeled, thickly sliced
  • 70g (1/3 cup) brown sugar
  • 125ml (1/2 cup) thin cream
Instructions:
  • In a large bowl, whisk together the flour and sugar. Create a well in the center and pour in the egg and buttermilk. Mix until well combined.
  • Heat a generous amount of melted butter in a large non-stick frying pan over medium-low heat. Pour three 1/4 cupfuls of the mixture along the edge of the pan. Cook until bubbles form on the surface, then flip and cook until golden. Transfer to a plate and continue with the remaining batter in 3 more batches.
  • Turn up the heat to medium-high and coat the pan with any leftover butter. Sear the banana for 1 minute on each side until it develops a light caramelization. Then, plate the banana.
  • Combine the brown sugar and cream in a pan. Cook while stirring for 5 minutes until the sugar dissolves and the sauce thickens. Then, remove from heat.
  • Plate the pancakes, layer with fresh banana slices, and generously drizzle with sauce before serving promptly.
