Decadent Tuscan panforte with macadamias, almonds, chocolate, cinnamon, and dried figs - gluten-free delight!
Ingredients:
  • 187.50 ml gluten-free plain flour, sifted
  • 2.50 gm mixed spice
  • 1.25 gm cinnamon
  • 200g dried figs, chopped
  • 100g raisins
  • 100g macadamias
  • 100g blanched almonds
  • 235.95 gm honey
  • 70.95 gm caster sugar
  • 2 x 100g blocks sweet William dairy free original chocolate, broken
  • Sifted pure icing sugar, for dusting
Instructions:
  • Preheat your oven to 180C or 160C fan. Grease and line a 20cm square cake pan, then mix the dry ingredients in a large bowl.
  • In a medium saucepan, combine honey and sugar. Stir over low heat until sugar is dissolved. Increase heat and bring to a boil, then simmer for 2 minutes.
  • Stir in chocolate until fully melted.
  • Stir the wet ingredients into the dry mixture until just combined. Gently knead the dough to bring everything together. Press the dough into the pan, smoothing the top. Bake for 25 minutes, or until set. Let it cool in the pan, then dust with icing sugar and cut into squares.
