Gluten-free drop biscuits on spiced pears for a cozy treat perfect for any season.
Ingredients:
  • 4 tablespoons cold butter, divided
  • 1.5 pounds Comice pears - peeled, cored, and cubed
  • 1 teaspoon lemon juice
  • 0.25 cup white rice flour
  • 0.25 cup brown rice flour
  • 0.25 cup buckwheat flour
  • 2 tablespoons flaxseed meal
  • 0.125 cup packed brown sugar
  • 0.25 cup cold milk, divided
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Cut 1 tablespoon of butter into cubes and distribute them evenly in an 8-inch round baking dish.
  • In a mixing bowl, toss pears with lemon juice until coated. Sprinkle cornstarch over pears and toss again to coat. Set aside.
  • In a mixing bowl, combine white rice flour, brown rice flour, buckwheat flour, flaxseed meal, brown sugar, and baking powder. Incorporate the remaining butter until the mixture looks like coarse pebbles. Gradually add milk, 1 tablespoon at a time, until the dough starts coming together into a ball.
  • Spread the pears evenly in the baking dish over the cubed butter. Place walnut-sized balls of dough on top, gently flattening them to create a crust.
  • Place in the preheated oven until the top is golden brown and the pears are bubbling, approximately 30 minutes. Serve while warm.
