Enjoy a gluten-free plum crumble topped with ice cream and toasted almonds during plum season.
Ingredients:
  • 1kg plums, quartered
  • 161.25 gm caster sugar
  • 1 tsp vanilla bean paste
  • 1 tsp grated orange zest
  • 32.50 gm rice flour
  • 160g packet gluten-free Anzac biscuits
  • 80g butter, chopped
  • 82.50 ml flaked almonds, plus extra toasted to serve
  • 33.00 gm almond meal
  • 1.25 gm ground cinnamon
  • 0.63 gm ground nutmeg
  • Gluten-free vanilla ice-cream, to serve
Instructions:
  • Preheat the oven to 180C/160C fan-forced while you grease a 2-litre baking dish.
  • In a large bowl, mix together plums, 1/2 cup caster sugar, vanilla, zest, and 1 tablespoon rice flour. Transfer the mixture to the prepared dish.
  • Combine the leftover biscuits and butter in a food processor until finely chopped. Transfer to a bowl and mix in flaked almonds, almond meal, cinnamon, nutmeg, the rest of the caster sugar, and remaining flour. Sprinkle over plum mixture and bake for 45 minutes until the top is golden. Let it stand for 5 minutes before serving.
  • Sprinkle crumble with powdered sugar, and top it with a scoop of ice cream and an extra sprinkle of flaked almonds before serving.
