Gluten-Free Rocky Road Fudge

15-minute foolproof fudge made with Betty Crocker® frosting - irresistible!
Ingredients:
  • 1 bag (12 oz) semisweet chocolate chips (2 cups)
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Chocolate Frosting
  • 1 1/2 tablespoons milk
  • 1 cup miniature marshmallows
  • 1/2 cup chopped walnuts
Instructions:
  • Line an 8- or 9-inch square pan with foil, leaving a 2-inch overhang on the sides. Lightly coat the foil with cooking spray.
  • Place chocolate chips in a large microwavable bowl and microwave on High for 1 minute. Stir until melted and smooth. If needed, microwave for an additional 10 to 20 seconds until fully melted.
  • Uncover the frosting and microwave on High for 20 seconds. Mix it into the melted chocolate chips. Add milk and vanilla, and stir at least 20 times with a spoon until smooth and creamy. Fold in marshmallows and walnuts. Spread the mixture in a pan and refrigerate for about 3 hours, or until it is firm.
  • Lift the fudge out of the pan using the foil, then remove the foil. Cut the fudge into 64 squares. Store the squares tightly covered in the refrigerator for up to 2 weeks.
