Try flavorful avocado sauce on spicy chicken for a delicious twist on classic Mexican cuisine. No cheese needed!
Ingredients:
  • 4 boneless skinless chicken breasts (6 oz each)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1 cup plain 2% Greek yogurt
  • 2 tablespoons lime juice
  • 3 tablespoons water
  • 1 avocado, pitted, peeled
  • 1 clove garlic, finely chopped
  • 1 bunch cilantro leaves (about 2 cups)
  • 3 to 4 tablespoons water
  • 1/8 teaspoon salt
  • 3 cups hot cooked rice
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Preheat oven to 325°F.
  • Dry the chicken thoroughly. In a medium bowl, mix the Spice-Dusted Chicken ingredients until the chicken is evenly coated.
  • Preheat a 10-inch ovenproof skillet over medium-high heat. Sear chicken, top side down, for 4 to 5 minutes until golden brown and easy to flip. Flip chicken over and transfer the skillet to the oven. Roast the chicken for 15 to 20 minutes or until it reaches an internal temperature of 165°F when tested with an instant-read thermometer.
  • Blend all Creamy Avocado Sauce ingredients in a blender or food processor on high speed until smooth, adjusting consistency with water as needed. Set aside.
  • Plate the chicken breast alongside the rice and sauce, then garnish with a sprinkle of fresh cilantro.
