Indulge in delicious strawberry cream scones - a delightful treat for your loved ones.
Ingredients:
  • 3 tablespoons sugar
  • 1 cup white rice flour
  • 1/2 cup tapioca flour
  • 1/4 cup millet flour
  • 1/4 cup potato starch flour
  • 2 teaspoons xanthan gum
  • 1 tablespoon gluten-free baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter, cut into 1/4-inch pieces
  • 1/2 cup chopped fresh strawberries
  • 1 1/4 cups whipping cream
Instructions:
  • Preheat oven to 375°F and line a cookie sheet with parchment paper.
  • Combine the flours, xanthan gum, 2 tablespoons of sugar, baking powder, and salt in a large bowl. Use a pastry blender or 2 knives to cut in the butter until you have coarse crumbs. Gently coat the strawberries with the crumb mixture. Mix in 1 cup plus 2 tablespoons of whipping cream until just combined.
  • Drop dough by 1/4 cupfuls onto a cookie sheet, spacing about 2 inches apart. Brush with the remaining 2 tablespoons whipping cream and sprinkle with the remaining 1 tablespoon sugar.
  • Bake until golden and puffed, about 25 to 30 minutes. Transfer to a cooling rack and serve warm.
