Elevate sugar snap peas by sautéing with onion, garlic, and thyme rice for a gourmet twist.
Ingredients:
  • 1 1/2 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried thyme leaves
  • 2/3 cup uncooked regular brown rice
  • 1 teaspoon vegetable oil
  • 1/2 cup chopped onion (1 medium)
  • 1 clove garlic, finely chopped
  • 1 medium red bell pepper, seeded, cut into thin bite-size strips
  • 2 cups frozen sugar snap peas
  • 2 tablespoons water
Instructions:
  • Bring 1 1/2 cups of water to a boil in a 2-quart saucepan with salt and thyme. Add rice, cover, and simmer over low heat for 45 to 50 minutes until the rice is tender.
  • In a 10-inch nonstick skillet, warm oil over medium heat, then sauté onion and garlic for 2 to 3 minutes until onion is tender. Stir in bell pepper, peas, and 2 tablespoons of water, cook and stir for another 2 to 3 minutes until peas are crisp-tender.
  • Add the cooked rice mixture and stir continuously for 1 to 2 minutes until warm throughout.
