Seared sugar snap peas with green onions, mint, lemon zest, and black pepper for a burst of fresh flavor and crunchiness.
Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 1 pound sugar snap peas , strings removed
  • 3 to 4 scallions or green onions, sliced on the diagonal
  • Kosher salt
  • Pinch sugar
  • Zest from 1 lemon
  • 3 tablespoons chopped fresh mint
  • Freshly ground black pepper, to taste
  • Lemon juice, to taste
Instructions:
  • Sauté sugar peas: Heat a large sauté pan over high heat for 1 minute. Add olive oil to the pan and heat until shimmering, about 1 to 2 minutes. Add sugar peas and coat with oil. Sprinkle salt, toss, and cook without stirring for 1 minute.
  • Combine green onions and sugar, and toss. Cook for 1 minute. Allow to cook undisturbed for another 2 minutes.
  • After turning off the heat, enhance the flavors: Blend in the refreshing lemon zest and fragrant mint, and adjust the seasoning with black pepper and lemon juice to your liking. Serve immediately.
