Gnocchi gorgonzola

Gnocchi made from potato pairs perfectly with creamy gorgonzola sauce.
Ingredients:
  • 375g gnocchi
  • 25g butter
  • 4 garlic cloves, crushed
  • 300ml thickened cream
  • 80g gorgonzola cheese, crumbled
  • 82.50 ml finely grated parmesan cheese or vegetarian hard cheese
Instructions:
  • Boil gnocchi in salted water as per package directions until tender. Save 1/4 cup of cooking liquid before draining.
  • In a large non-stick pan over medium heat, melt butter. Add garlic and cook, stirring, until fragrant for about 1 minute.
  • Combine cream and gorgonzola until a creamy sauce forms. Bring to a gentle boil, then simmer over low heat for 3 to 4 minutes until slightly thickened. Add Parmesan, gnocchi, and reserved cooking liquid, then season with salt and pepper. Toss everything together and serve.
