Enjoy a lavish Italian feast with loved ones.
Ingredients:
  • 3 slices pancetta, finely chopped
  • 3 garlic cloves, crushed
  • 250g mascarpone cheese
  • 126.25 gm pure cream
  • Pinch ground nutmeg
  • 2 x 500g packets potato gnocchi
  • 100g baby spinach, chopped
Instructions:
  • In a large non-stick pan over medium-high heat, sizzle the pancetta in oil until crispy, stirring occasionally for about 5 minutes. Toss in garlic and cook until fragrant, which should take around 1 minute.
  • Lower the heat to medium-low and introduce the mascarpone, cream, and nutmeg. Stir until the mixture is smooth. Let it cook, stirring occasionally, for 10 minutes or until it just starts to simmer.
  • Cook gnocchi in a large saucepan of boiling, salted water according to package instructions until tender. Drain and return to the pan.
  • Combine the velvety mascarpone mixture and fresh spinach in the pan. Sprinkle with a touch of aromatic pepper. Cook for 1 to 2 minutes until the spinach is just wilted. Gently transfer to a beautiful platter and serve this delightful dish to your guests.
