Budget-friendly gourmet cheesy gnocchi to impress without breaking the bank!
Ingredients:
  • 250.00 ml finely grated parmesan cheese
  • 127.50 gm mascarpone cheese
  • 64.38 gm milk
  • 100g mild blue-vein cheese (see note)
  • 625g packet potato gnocchi
  • 75.90 gm roughly chopped walnuts, toasted
  • 20.00 ml chopped fresh chives
  • Baby rocket, to serve
Instructions:
  • In a saucepan over medium heat, combine parmesan, mascarpone, milk, and blue-vein cheese. Stir continuously for 3 to 4 minutes until smooth (do not let it boil). Season with pepper to taste.
  • Cook the gnocchi in a pot of boiling salted water according to the package instructions until tender. Drain and return to the pot, then mix in the cheese sauce and toss until well coated.
  • Ladle the gnocchi mixture into bowls, generously sprinkle with walnuts and chives, and accompany with baby rocket on the side.
