Cozy up with a comforting gnocchi dish for a winter night.
Ingredients:
  • 45.50 gm olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 4 anchovy fillets, finely chopped (optional)
  • 2 x 400g cans chopped tomatoes
  • 5.00 gm caster sugar
  • 2 tsp balsamic vinegar
  • 60g olive
  • 125.00 ml firmly packed mint leaves, torn
  • 800g gnocchi, cooked
  • 80g parmesan
Instructions:
  • In a large saucepan over medium heat, sauté onion, garlic, and anchovies (if using) in oil for 5 minutes until the onion is soft.
  • Combine fresh, ripe tomatoes with a hint of sugar and a splash of vinegar in a pan. Gently simmer over low to medium heat for 7 minutes, allowing the flavors to concentrate slightly.
  • Combine olives, fresh mint, and season with salt and pepper to taste. Mix in gnocchi until well combined. Portion into bowls and garnish with Parmesan. Serve promptly.
