Flavorful goat cheese omelet with garlic & herb, truffle, or tomato basil for a delicious twist.
Ingredients:
  • 3 large eggs
  • 1 teaspoon water
  • 1 tablespoon butter
  • 1 tablespoon minced fresh chives
  • 2 ounces plain goat cheese, crumbled
Instructions:
  • Whisk eggs, water, salt, and pepper in a bowl until light, frothy, and well combined, about 30 seconds.
  • In an 8-inch nonstick skillet over medium heat, melt butter. Quickly pour in eggs and stir vigorously for 20 to 30 seconds until they begin to set. Smooth out the top and allow the eggs to cook until nearly firm and glossy. Gently push any raw egg towards the edge of the skillet if needed. Lower heat to medium-low to avoid browning.
  • Sprinkle goat cheese and 2 teaspoons of chives in the center of the omelet. Fold one side over the cheese, followed by the other side, creating three layers. Transfer to a plate and sprinkle the remaining chives on top.
