Chef John's speedy omelet with goat cheese and chives is a must-try!
Ingredients:
  • 3 eggs, beaten
  • 1 tablespoon crumbled goat cheese, or to taste
  • 2 teaspoons chopped chives, divided, or to taste
  • sea salt and ground black pepper to taste
Instructions:
  • Heat olive oil in a large skillet over medium heat, swirling to coat. Pour beaten eggs into the skillet and cook until they bubble and start to firm up.
  • Gently lift the cooked edges of the omelet with a rubber spatula, tilting the skillet to let any uncooked egg flow underneath. Keep cooking and lifting the edges for 1 to 2 minutes until the omelet is almost fully set. Take the skillet off the heat and spread any remaining runny egg on top evenly using the spatula.
  • Sprinkle goat cheese, 1 1/2 teaspoons chives, sea salt, and black pepper over the omelet. Fold the omelet in thirds over the filling. Slide it onto a plate with the folded side down.
  • Garnish the omelet with the remaining 1/2 teaspoon of chives before serving.
