Spicy Korean roasted potatoes - simple and quick side dish.
Ingredients:
  • 2 russet potatoes, peeled and cut into chunks
  • 2.5 tablespoons grapeseed oil, divided
  • 1 teaspoon salt
  • 2 tablespoons gochujang (Korean hot pepper paste)
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • 1 pinch red pepper flakes
  • 2 scallions, sliced
  • 0.5 medium lime
Instructions:
  • Give those potatoes a refreshing shower in a colander to wash away any extra starch. Let them drip dry.
  • In a large microwave-safe bowl, combine potatoes, 1 tablespoon oil, and salt. Mix well to coat evenly. Cover and microwave on high for 4 minutes. Give it a stir, cover again, and continue microwaving until the potatoes are fork-tender, about 2 more minutes. Drain in a colander after cooking.
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  • Combine gochujang, 1 1/2 tablespoons of oil, soy sauce, sesame oil, and red pepper flakes in the same bowl used for the potatoes. Add the potatoes back into the bowl and mix well to coat. Transfer the coated potatoes onto the baking sheet.
  • Roast the potatoes in the preheated oven until they turn golden brown, stirring occasionally, for about 20 minutes.
  • Take out of the oven and sprinkle with chopped scallions. Drizzle fresh lime juice on top.
