Goji berry fried rice

Elevate your Chinese New Year feast with this modern fried rice twist.
Ingredients:
  • 200g (1 cup) white long-grain rice
  • 375ml (1 1/2 cups) water
  • 60g (1/2 cup) goji berries
  • 48.80 gm Oyster Sauce
  • 21.00 gm soy sauce
  • 20.00 ml Chinese rice wine
  • 2 tsp sesame oil
  • 36.40 gm peanut oil
  • 4 eggs, lightly whisked
  • 2 garlic cloves, finely chopped
  • 20.00 ml finely chopped fresh ginger
  • 1 bunch gai lan, trimmed, coarsely chopped
  • Green shallot, thinly sliced, to serve
Instructions:
  • 1. Rinse the rice under cold running water until clear. Bring to a boil in a saucepan, stirring well. Lower the heat, cover, and cook for 12 minutes until tender. Allow to rest covered for 5 minutes, then fluff the rice. Spread it on a baking tray, let it cool, cover, then refrigerate overnight.
  • Place the berries in a heatproof bowl and cover them with warm water. Let them stand for 10 minutes, then drain.
  • Mix together the oyster sauce, soy sauce, rice wine, and half of the sesame oil in a small bowl.
  • In a hot wok, quickly cook whisked eggs in half of the peanut oil. Stir until almost set, then plate up.
  • Clean the wok and heat the rest of the peanut oil. Stir-fry garlic and ginger for 1 minute. Stir-fry gai lan stems for 2 minutes until they begin to soften. Stir-fry leaves for 1 minute until wilted. Add rice, berries, and sauce, and stir-fry for 2 minutes until heated through. Gently mix in the egg and sprinkle shallots on top.
