Golden egg curry

Golden turmeric-coated hard-boiled eggs shine in a delicious coconut curry.
Ingredients:
  • 6 eggs
  • 36.80 gm vegetable oil
  • 1 brown onion, halved, thinly sliced
  • 2 tomatoes, finely chopped
  • 12 fresh curry leaves
  • 2 tsp mustard seeds
  • 1 tsp ground turmeric
  • 400ml can coconut cream
  • Pappadums, to serve
Instructions:
  • In a saucepan, submerge the eggs in cold water. Boil over medium heat, then simmer on medium-low for 7 minutes. Drain and peel the eggs.
  • In a saucepan over medium heat, sauté onion in oil until golden, about 7 minutes. Stir in tomato, curry leaves, mustard seeds, and turmeric, cooking until mustard seeds pop, about 2 minutes. Add coconut cream and simmer until slightly thickened, stirring occasionally, for about 10 minutes. Gently stir in eggs and cook until warmed through, around 1 minute.
  • Serve the aromatic egg curry with crispy pappadums.
