Golden fruits with vanilla syrup and ice-cream

Indulge guilt-free in this luscious low-fat tropical dessert.
Ingredients:
  • 1 mango, cheeks removed, peeled, finely chopped
  • 1 peach, halved, stone removed, finely chopped
  • 300g pineapple, peeled, core removed, finely chopped
  • 2 passionfruit, halved, pulp removed
  • 40.00 ml chopped fresh mint
  • 4 scoops low-fat vanilla ice-cream
  • 125ml (1/2 cup) fresh orange juice
  • 40.00 gm caster sugar
  • 1/4 tsp vanilla bean paste
Instructions:
  • For the vanilla syrup, combine orange juice, sugar, and vanilla in a small saucepan over medium heat. Stir until sugar dissolves. Increase heat to medium-high and simmer for 3-5 minutes until thickened. Let it cool before using.
  • Combine the mango, peach, pineapple, passionfruit pulp, and mint in a bowl, tossing everything together.
  • In 4 serving dishes, arrange the ice-cream slices or scoops. Top with the fruit salad and generously drizzle with vanilla syrup before serving.
