Delicious Florentine almond cookies perfect for breakfast with coffee.
Ingredients:
  • 200g flaked almonds, roughly chopped
  • 90g (1/2 cup) sultanas, roughly chopped
  • 75g (1/2 cup) Craisins - Sweetened Dried Cranberries (Ocean Spray brand), roughly chopped
  • 50g (1/3 cup) plain flour
  • 80g butter
  • 80ml (1/3 cup) golden syrup
  • 55g (1/4 cup, firmly packed) brown sugar
  • 250g good-quality dark chocolate, chopped
  • 40g copha, chopped
Instructions:
  • Preheat your oven to 180°C and line 2 baking trays with non-stick baking paper. In a large bowl, mix together almonds, sultanas, Craisins, and flour.
  • Combine the butter, golden syrup, and sugar in a small saucepan over medium heat until the sugar dissolves. Mix into the dry ingredients until fully incorporated.
  • Place spoonfuls of almond mixture on the lined trays, leaving a 5cm gap between each. Dip a teaspoon in warm water and spread each into a 7cm disc.
  • Bake in preheated oven for 10 minutes or until dark golden, swapping trays halfway through cooking. Let cool on trays. Repeat with the rest of the almond mixture.
  • Melt the chocolate and copha in a heatproof bowl over simmering water until smooth. Dip half of a cooled biscuit into the chocolate mixture, then set on a wire rack. Repeat with the rest of the biscuits and chocolate.
