Ingredients:
  • Golden syrup, extra, to serve
  • 125ml golden syrup
  • 125g butter, softened
  • 100g caster sugar
  • 225g self-raising flour
  • 160ml milk
  • Ice-cream or vanilla custard, to serve
Instructions:
  • Prepare your 4-cup (1 litre) ceramic pudding basin by greasing it, then pour the golden syrup into the base.
  • Cream together the butter and sugar until pale and fluffy using an electric mixer. Gradually add eggs one at a time, mixing well after each addition. Alternate adding batches of flour and milk, then spoon the batter into a pudding basin and level the top.
  • Place a sheet of baking paper and foil on a work surface. Fold a 3cm-wide pleat down the centre. Cover the basin with the layered paper and foil, securing it with kitchen string. Roll up the edges to prevent contact with water when cooking.
  • 1. Fill a large saucepan with enough boiling water to reach halfway up the sides of a basin placed on top of an upturned saucer. Cook covered over medium-low heat for 2 hours until a skewer inserted in the center comes out clean. Remove from heat, take the basin out, and let it sit for 5 minutes before flipping onto a plate.
  • Drizzle extra syrup over the pudding and serve with ice cream or custard, if desired.
