Steamed golden syrup pudding

Ingredients:
  • 1 orange, rind finely grated, juiced
  • 160.80 gm golden syrup
  • 175g self-raising flour, sifted
  • 4.00 gm baking powder
  • 175g unsalted butter, softened
  • 175g caster or brown sugar
  • 3 eggs
  • Chilled cream to serve, optional
  • 1 orange, zested, juiced
  • 20.00 gm caster sugar
  • 20ml (1 tbsp) orange liqueur, optional
Instructions:
  • Prepare the basin by greasing it. Mix together half of the zest with the golden syrup and spread it in the basin. Combine the flour, baking powder, butter, sugar, eggs, and the remaining zest in a food processor until well combined (adjust with a little orange juice if needed for the right consistency). Spoon the mixture into the basin, smooth the top, and cover with pleated baking paper. Tie it securely with string and cover with foil. Steam in a pan filled halfway with water over low heat for 2 hours, ensuring to check and top up water when needed. Let it sit for 10 minutes before serving.
  • For the sauce, combine orange zest, orange juice, sugar, and golden syrup in a saucepan. Bring to a boil, then simmer over low heat for 1-2 minutes. Optionally, stir in the liqueur.
  • Unmold the pudding and drizzle the sauce on top. Enjoy with a dollop of cream.
