Indulge in warm, gooey chocolate chip cookies with a side of hot tea this weekend.
Ingredients:
  • 185g butter, softened
  • 200g brown sugar
  • 100g caster sugar
  • 300g plain flour
  • 2.00 gm baking powder
  • 200g dark chocolate, coarsely chopped
Instructions:
  • Preheat your oven to 180C and prepare 2 baking trays by lining them with parchment paper.
  • In a medium bowl, use an electric mixer to cream together the butter and combined sugars until pale and creamy. Mix in the egg and egg yolk until well combined. Stir in the flour and baking powder with a wooden spoon until fully incorporated. Finally, add the chocolate and mix until evenly distributed.
  • Form 2 tablespoons of the mixture into a ball, then gently flatten on a lined tray. Repeat with the rest of the dough. Bake in a preheated oven for 12 minutes (or 17 minutes for a crispier biscuit). Let cool on the tray before serving.
