Decadent dark chocolate pudding with a surprise center. Easy to make and perfect for preparing in advance!
Ingredients:
  • 10g butter, melted (for greasing)
  • 53.75 gm caster sugar
  • 1 orange, cut into segments
  • 200g 70% cocoa dark chocolate, chopped
  • 150g butter, chopped
  • 59.40 gm brown sugar
  • 4 eggs, lightly beaten
  • 1/2 tsp orange rind, finely grated
  • 62.50 ml plain flour
  • 39.60 gm breakfast marmalade
  • 126.25 gm double cream, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease six 4.5cm-deep, 8cm (base), 1/2-cup-capacity ramekins with melted butter and line the bases with baking paper. Arrange them on a baking tray.
  • In a medium saucepan over medium-high heat, combine caster sugar and 1/2 cup water. Stir for 1 minute until sugar dissolves. Add orange segments and bring to a boil. Reduce heat to medium and simmer for 8 minutes until syrup thickens slightly. Remove from heat and keep warm by covering.
  • Place chocolate, butter, and brown sugar in a large heatproof bowl over a saucepan of simmering water (ensure the bowl doesn't touch the water). Heat and stir occasionally for 3 minutes until melted and smooth. Remove from heat and let it cool for 2 minutes.
  • Combine eggs and orange rind with chocolate mixture, whisk until incorporated. Sift in flour and whisk until combined. Fill prepared ramekins with 3/4 of the batter. Add 1 teaspoon of marmalade to the center of each pudding. Top with the remaining batter evenly. (Check Notes for make-ahead instructions.)
  • Bake for 12 minutes until a crust forms on top, while the center of the pudding remains slightly wobbly to the touch. Remove from oven and let cool for 2 minutes.
  • Gently loosen the edges of the puddings with a knife, then carefully flip them onto serving plates. Serve right away with a drizzle of orange syrup and a dollop of cream.
