Gooey Sugar Cookie Bars

Indulgent gooey butter cake bars made with sugar cookie mix, topped with whipped cream and fresh strawberries.
Ingredients:
  • 1/2 cup butter, softened
  • 1 package (8 oz) cream cheese, softened
  • 3 1/2 cups powdered sugar
  • 1/3 cup butter, melted
  • 3 cups coarsely chopped strawberries (about 1 lb)
  • 2 tablespoons powdered sugar
  • 2 teaspoons fresh lemon juice
  • 1 cup heavy whipping cream, whipped
Instructions:
  • Preheat oven to 350°F and generously spray the bottom of a 13x9-inch pan with cooking spray.
  • Combine the cookie mix and 1/2 cup of softened butter in a large bowl until you get a coarse crumb mixture. Evenly spread the mixture in the pan and gently press it down.
  • In a large bowl, use an electric mixer to blend cream cheese, 3 1/2 cups of powdered sugar, eggs, and vanilla until smooth. Increase speed to high, then beat in 1/3 cup of melted butter until well combined. Spread this mixture evenly over the cookie base.
  • Bake until beautifully golden brown, usually 30 to 35 minutes. Allow to cool fully for about 2 hours.
  • Before serving, combine strawberries, 2 tablespoons of powdered sugar, and lemon juice in a medium bowl. Allow to sit for 10 minutes, stirring occasionally. To serve, cut bars into rows of 5 by 3. Garnish each with strawberries and a dollop of whipped cream. Store any leftovers in the refrigerator.
