Easy gourmet pub-style burgers with Dijon-infused patties topped with crisp pancetta.
Ingredients:
  • 1 teaspoon minced garlic
  • 1.3333333730698 pounds ground beef
  • 0.5 cup bread crumbs
  • 1 shallot, minced
  • 2 tablespoons Dijon mustard
  • 1 egg
  • 1 pinch kosher salt
  • 1 pinch ground black pepper
  • 6 slices pancetta
  • 6 hamburger buns, split
Instructions:
  • Combine ground beef, bread crumbs, shallot, Dijon mustard, egg, garlic, salt, and black pepper in a large bowl. Chill mixture for 20 minutes to 2 hours to enhance flavors.
  • Shape the ground beef mixture into 6 juicy patties.
  • Preheat a skillet over medium heat and lay pancetta slices in a single layer. Cook until pancetta begins to sweat, about 3 to 5 minutes. Remove pancetta from skillet and keep warm.
  • Preheat the grill to medium heat and brush the grate with a light coating of oil.
  • Grill the patties until they reach your preferred level of doneness, approximately 4 minutes on each side for medium-well burgers. Use an instant-read thermometer to check that the center reads 160°F (70°C).
  • Place a juicy burger patty in each fluffy bun and crown it with a crispy pancetta slice.
