Delicious Mexican chicken taquitos filled with flavorful green onions, tomatoes, and spices, perfect for snacking.
Ingredients:
  • 1 pound skinless, boneless chicken breast halves
  • 3.5 cups vegetable oil (such as Crisco®), divided
  • 1 cup finely chopped tomatoes
  • 0.5 cup minced green onions
  • 6 tablespoons chicken broth
  • 2 teaspoons all-purpose flour
  • 1 teaspoon minced garlic
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon chili powder
  • 12 (6 inch) corn tortillas
  • 12 wooden picks
  • 1 cup shredded lettuce, or to taste
  • 0.25 cup guacamole, or to taste
Instructions:
  • Simmer chicken in a skillet of gently bubbling water until no longer pink in the center, 20 to 25 minutes. Ensure the chicken reaches an internal temperature of at least 165 degrees F (74 degrees C). Shred the cooked chicken using a fork after it has cooled. Remove chicken, dry the skillet, and proceed with the next steps.
  • In a skillet over medium heat, heat up 1 tablespoon of vegetable oil. Cook and stir shredded chicken, tomatoes, green onions, chicken broth, flour, garlic, cumin, oregano, chili powder, and salt until heated through, about 3 to 5 minutes. Set aside.
  • In a heavy 10-inch skillet, warm the remaining vegetable oil over medium heat. Gently dip tortillas in the hot oil to soften for about 1 minute. Use tongs to remove tortillas and let them drain on paper towels, keeping the oil in the skillet.
  • Heat the oil until it reaches 375 degrees F (190 degrees C).
  • Place a generous 2 tablespoons of the flavorful chicken mixture in the center of each tortilla. Carefully roll up the tortillas around the delicious filling and secure them in place with wooden toothpicks.
  • Fry rolled tortillas in hot oil until beautifully golden, for 3 to 5 minutes. Use a slotted spoon to remove taquitos and let them drain on paper towels. Present the taquitos on a crisp bed of shredded lettuce alongside a side of guacamole.
