Delight your loved ones with quick and delicious Greek yogurt chicken in just 25 minutes.
Ingredients:
  • 1 medium cucumber, peeled, seeded and finely chopped
  • 1/4 cup Yoplait® All Natural Fat Free plain yogurt (from 32 oz. container)
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons lemon juice
  • 1/4 teaspoon ground cumin
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons vegetable oil
  • 2 tablespoons water
  • Fresh parsley, if desired
Instructions:
  • Combine all sauce ingredients in a medium bowl and refrigerate until ready to serve.
  • Season both sides of the chicken with a tantalizing mix of salt and cinnamon. Heat oil in a 10-inch skillet over medium-high heat and sauté the chicken until beautifully golden and cooked through, about 10 to 12 minutes, turning occasionally. Lower the heat, add water, cover, and simmer for an additional 2 to 3 minutes until the juices run clear when the thickest part of the chicken is pierced (internal temperature should read 165°F).
  • Plate the chicken alongside the creamy yogurt sauce. Sprinkle with fresh parsley to add a pop of color.
