Greek Frittata

Try this quick and tasty Greek egg frittata for dinner! Ready in just 30 minutes.
Ingredients:
  • 8 eggs
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup finely crumbled feta cheese
  • 1 tablespoon vegetable oil
  • 1 cup frozen hash brown potatoes with onions and peppers
  • 1 tablespoon chopped fresh or 1 teaspoon dried oregano leaves
  • 1 1/2 cups bite-size pieces spinach
Instructions:
  • Whisk eggs, milk, salt, and pepper until smooth and yellow. Fold in the cheese and set aside.
  • In a 10-inch ovenproof skillet, heat oil over medium heat. Cook potatoes and oregano for 3 minutes, stirring often. Add spinach and continue cooking for about 1 minute until potatoes are tender and spinach begins to wilt. Lower the heat to medium-low.
  • Pour the beaten eggs evenly over the flavorful potato mixture and cook with a lid on for 7 to 10 minutes until the eggs are almost set in the center and have a nice light brown color on the bottom.
  • Preheat broiler. Broil frittata 5 inches from heat for about 2 minutes, or until the top is lightly browned.
