Air-Fried Greek Yogurt Frittata

Tangy Greek yogurt elevates this flavorful air-fried veggie frittata.
Ingredients:
  • 0.5 teaspoon light olive oil
  • 2 tablespoons minced onion
  • 2 tablespoons minced carrot
  • 2 tablespoons minced celery
  • 2 tablespoons minced Italian (flat-leaf) parsley
  • 0.5 (8 ounce) package baby spinach leaves
  • 4 large eggs
  • 0.33333334326744 cup nonfat plain Greek yogurt
  • 1 teaspoon freshly ground black pepper
  • 0.5 teaspoon red pepper flakes
Instructions:
  • Preheat your air fryer to 350 degrees F (175 degrees C with a nonstick 6-inch round cake pan inside.
  • Carefully take out the cake pan using an oven mitt once the air fryer is preheated. Drizzle oil into the pan, followed by onion, carrot, celery, and parsley. Give it a good mix to combine all the ingredients.
  • Place the pan back in the air fryer and cook until the onion becomes translucent and tender, around 5 minutes.
  • Roughly chop half of the spinach and mix it in a bowl with eggs, Greek yogurt, and black pepper. Pour the egg mixture into the cake pan and gently combine with the cooked vegetables. Save the rest of the spinach leaves for later.
  • Air fry the frittata until golden on top and set in the center, approximately 18 minutes. Allow it to cool for 5 minutes before serving.
  • Gently release the frittata from the cake pan, sprinkle with pepper flakes, and elegantly serve on top of the leftover spinach leaves.
