Greek Marinated Roasted Peppers, Olives and Feta

Experience Greek flavors with marinated peppers, olives, and cheese.
Ingredients:
  • 5 large red bell peppers
  • 1/4 cup olive or vegetable oil
  • 3 tablespoons lemon juice
  • 1/2 cup chopped fresh parsley
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh or 2 teaspoons dried oregano leaves
  • 2 cloves garlic, finely chopped
  • 2 cups pitted kalamata olives
  • 8 oz feta cheese, cut into 1/2-inch cubes (1 cup)
  • Baguette slices, if desired
Instructions:
  • Preheat oven to the broil setting. Arrange bell peppers on a baking sheet and broil with the tops about 5 inches away from the heat source, turning occasionally, until the skin is blistered and evenly browned. Transfer the peppers to a sealed plastic bag and allow them to sit for 20 minutes.
  • In a sealed container, vigorously shake together olive oil, freshly squeezed lemon juice, chopped parsley, minced onion, dried oregano, and crushed garlic.
  • Prepare the peppers by removing skins, stems, seeds, and membranes. Cut them into 1-inch pieces. Combine the peppers, olives, and cheese in a glass bowl or jar. Pour the marinade over the mixture. When ready to serve, use a slotted spoon and enjoy with baguette slices.
