A go-to easy and satisfying recipe using pantry staples for a quick delicious meal.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 1.5 tablespoons butter
  • 0.5 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
  • 1 (14 ounce) can artichoke hearts in water
  • 1 tomato, chopped
  • 0.5 cup crumbled feta cheese
  • 3 tablespoons chopped fresh parsley
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • salt to taste
  • ground black pepper to taste
Instructions:
  • Cook penne pasta in a large pot of boiling salted water until perfectly tender. Then, drain the pasta.
  • In a large skillet over medium-high heat, melt butter then sauté onion and garlic for 2 minutes. Add chopped chicken and cook until golden brown, stirring occasionally, for about 5 to 6 minutes.
  • Lower the heat to medium-low. Chop and drain the artichoke hearts before adding them, along with chopped tomato, feta cheese, fresh parsley, lemon juice, dried oregano, and drained penne pasta into the large skillet. Cook until everything is heated through, approximately 2 to 3 minutes.
  • Season generously with a pinch of salt and a dash of freshly ground black pepper. Serve while still warm.
